Super easy chocolate covered biscuits that require no baking. So yummy and nobody can tell there is some healthy avocado in there!
Ingredients:
Biscuit
- 3 dl (1 1/4 cup) shredded coconut
- 0,75 dl (1/3 cup) almond meal
- 2 tbsp coconut oil
- 2 tbsp peanut butter
- 4 medjool dates
- pinch of sea salt
Optional: Any super powder of your liking, I sometimes add a tbsp of rosehip powder for a top up of natural vitamin C.
Chocolate layer
- 1/2 dl (1/4 cup) cacao butter (or a few pieces of dark chocolate)
- 2 tbsp coconut oil
- 1 tbsp peanut butter
- 2 tbsp cacao
- 1/2 avocado
- 1 tbsp honey
- sea salt to sprinkle on top
Method:
- Add shredded coconut and coconut oil to a food processor and mix for a while until the shredded coconut turns into a butter-like texture.
- Add in the rest of the biscuit ingredients to the food processor and blend together.
- Spread out the biscuit mix in a glass container or baking tray (no paper needed), about 1-2 cm (0,4 – 0,8 inches) thick and put in the freezer whilst making the chocolate layer.
- Melt the cacao butter (or pieces of chocolate) bain-marie style.
- Blend the cacao butter with all the other chocolate layer ingredients in a food processor and spread on top of the biscuit layer. Sprinkle some sea salt on top.
- Cut your chocolate covered biscuits into pieces and refrigerate until serving.
